AMBRIEL REDFOLD SPARKLING ROSÉ 2014: The Ambriel Rosé has a depth and succulence with a firm core of acidity which nicely balances the nuanced red berry fruit and spice of the Pinot Noir. This is a serious wine, a sipping glass of bubbles, and one that will partner with foods very well. The depth and structure will allow this to go with tuna, chicken, and salmon dishes. It can also work with cheeses.
FOX AND FOX BLANC DE GRIS 2014: This wine really delivers plenty of character and style. It proves that, in the right hands, Pinot Gris can produce great wine. It delivers an intensity of aromatics with cream, fresh pastry. Roasted nuts and cooked apple, with some fresh pear too. The palate mirrors the depth of flavour and adds yellow plum, white peach, butterscotch and more. Whilst rich, the wine has a cut of acidity to bring balance and freshness to the umami richness. There is a fine gentle mousse throughout and a long finish. This is high quality wine indeed, one of the best. Wine this flavourful can be sipped on its own but will partner a rich dish such as chicken with morels or truffle.
WOODCHURCH CLASSIC CUVÉE 2015: The Woodchurch Classic Cuvée is a blend of 74% Chardonnay, 15% Pinot Noir and 11% Pinot Meunier and shows the Chardonnay dominance in the crisp core of lemon freshness and touch of white peach in the fruit profile. The wine has a crem pat. nose with apple notes and a hit of umami richness. All in all this a beautiful wine which is really starting to blossom. It is a super aperitif but will also partner seafood, mixed salads and white meats, see how it compliments the dish and freshens the palate.
