This is real find for Corkk. This creation of the innovative winemaker, Adrian Pike, is made in tiny volumes, only 450 bottles and we have managed to acquire a small allocation. Petulant Nature is a take on the term Pettilant Naturel , naturally sparkling wine used to describe the way the wine is made. The wine is made by fermenting the must in a tank, as with all Westwell wines, using indigenous yeasts and then bottling the wine before the end of the fermentation. The remaining sugars are then fermented by the yeast left in the wine and bubbles are created in the bottle but not with the same pressure to be found in the Traditional method. The bottle is closed with a crown cork rather than a cork.

The wine is made from the Ortega grape and delivers fresh apple and lemon flavours notes on a dry, lively bubbly mouthful of vinous pleasure. This is not the most complex of wines, it is about fun and flavour and the joy of wine. It is the aperitif of rustic style and intended for early drinking rather than long ageing.
