Subtle fruits of cream, pastry and apple sauce with a fine gentle mousse; exquisite.

We are tremendously excited to have a few bottles of this fabulous award winning wine from the acclaimed and multi-award winning producer, Fox and Fox. The one problem with these wines is their scarcity value so we are delighted to have secured a number of these hard to get bottles.

The Fox and Fox Pinot Meunier Brut 2014 is a blend of 95% Meunier and 5% Chadonnay, has a straw hue and fine beads, lazily drifting upwards. The nose has that fine yeasty, brioch, roasted hazelnut scent which promises a mature and complex palate. In the mouth the wine really delivers complex and harmonious characters of cream, toast, nut and pear with a fine gentle mousse and a long flavoursome finish. This is classy world-beating wine and it is great to be able to showcase this at Corkk. Only 1, 647 bottles were produced but each one is a treat.

Part of the quality of this wine comes from the long time spent on lees. This spent at least 34 months maturing in the bottle on the dead yeast cells and this allowed for a steady development of autolytic characters and integration of the structural elements of the wine. There is dosage of 9g to balance the acidity and the wine has spent a more time maturing in the bottle after the disgorging date, June 2018. The wine is mature now but do not be afraid to put it in the cellar for up to five more years for it will develop further and become more elegant and sedate.

Food Pairing Ideas: Mature wines like this are beautiful to drink and savour but will also partner chicken and guinea fowl, especially when cooked with morel and cream.
